I will never get bored with how excited my German friends get when I bake up an “American” baked goods concoction. Typical American style baked goods are very different from typical German ones.
These are probably my favorite cookies ever. I know that is a big statement, but they really are just so perfect. I am always a sucker for anything toffee like or involving caramel and when these cookies come out of the oven they will have magically caramelized and formed this perfect crunch and taste of toffee in them. My little sister is turning 24 years old today. I have mentioned before , I am usually the one responsible for baking up the birthday cakes. But since I moved away, my duties have shifted to being the responsible one for finding the recipes for someone else to prepare. As we were preparing to move, that meant clearing out the fridge. I had one last bit of a caramel from my miracle batch creation sitting in a jar in the fridge. After all of the suspense, frustration, and effort that went into creating that caramel sauce, as mentioned here, I could not just simply throw it out. So that meant that I just “had” to make these Salted Caramel Chocolate Cupcakes.

My mom made these cookies every once and a blue moon, but they always stayed with me. They are one of my favorites cookies. They just have this perfect crunchiness to them that comes from the golden syrup combined with oats and coconut.
