My mom made these cookies every once and a blue moon, but they always stayed with me. They are one of my favorites cookies. They just have this perfect crunchiness to them that comes from the golden syrup combined with oats and coconut. (more…)
I sometimes get a craving for Tex Mex from back home. You just can’t find good Tex Mex here. A dip my mom used to make for parties was this Mexican Layer Dip. I could eat it by the spoonful. It has some Tex Mex flavors in it and is a bit of a comfort food for me. It reminds me of home. (more…)
I am the designated birthday cake baker normally. And I love it this way! All through out college, I always prepared the birthday cakes for my friends and roommates when a birthday rolled around. For me, it was not most important to have Jell-o shots for the party, but a birthday cake! Granted sometimes I made a compromise and made a cake with liquor for a 21st birthday. This did not always go as planned. One memorable cake was so strong we ended up serving it in shot classes. No joke. My friend Nidhi had requested something with fruit, so I made a pineapple upside rum cake. The rum somehow took over the whole cake.
Since moving to Germany, my sister has had to take up the reins of baking the birthday cakes for the family. But that doesn’t mean I am off the hook. She still has me search out the recipes for each cake. For my mom`s last birthday, I put together several recipes to come up what can only be called a Chocolate Monster Cake. (more…)
I was having a goodbye breakfast at work and I wanted to bring something else in addition to the traditional German breakfast, which consists of bread rolls, sliced meats, and cheeses. Still after living here for some time, I have not gotten quite used to the typical breakfast. My favorite breakfast looks normally more like this. I stumbled across this recipe after a bit of Googling. Below it is in English. It was very simple and quick to put together after work for the next morning. Only problem was I has to keep a certain someone from eating them all as they were cooling! He got the extra after the breakfast at work. You could try a variety of fillings, such as spinach and sun dried tomatoes, or Swiss cheese and cut up ham pieces, or broccoli and cheese. Also great as an effortless, quick appetizer. (more…)
I say it time and time again and it never stops ringing true – It is the little things in life. I truly believe it is the little things in life that bring me happiness, whether it is an unexpected postcard in the mail or arriving home to a delicious dinner on the table or finding a special ingredient (as is often the case in Germany!). It seems quite silly really when thinking about the happiness that finding some random ingredient I have been searching out in Germany brings me. I should stop expecting to ever have a grocery store near what was in the US, but I still ever hopefully seek out ingredients that I would easily find in the US. For example, a couple of months ago I had a craving to make this killer kale salad I had before in a restaurant in San Antonio, Texas. So I first of all looked up the German word for kale – Grünkohl – and then set off to the local corner vegetable stand in search of kale. When I asked if they had it, the lady looked at me a little funny and then said not at this time of year. That was that. My hopes of a kale salad were over and it soon left my head.
When I have had a long day at the office and I come home feeling especially ravenous, I want something quick for dinner! The last thing I feel like doing is heading to the supermarket, then heading home and cooking it all up. Plus first I have the daunting task of deciding on something to make. Choices choices. When I was younger, my mom made us egg in the holes as a quick “I don’t feel like cooking” dinner. This was my inspiration for whipping up fried egg sandwiches/toasties one night. Now one of our favorite fall back options when looking for something quick to make for dinner are these egg sandwiches. (more…)
