Spinach and feta pinwheelsI was having a goodbye breakfast at work and I wanted to bring something else in addition to the traditional German breakfast, which consists of bread rolls, sliced meats, and cheeses. Still after living here for some time, I have not gotten quite used to the typical breakfast. My favorite breakfast looks normally more like this. I stumbled across this recipe after a bit of Googling. Below it is in English. It was very simple and quick to put together after work for the next morning. Only problem was I has to keep a certain someone from eating them all as they were cooling! He got the extra after the breakfast at work. You could try a variety of fillings, such as spinach and sun dried tomatoes, or Swiss cheese and cut up ham pieces, or broccoli and cheese. Also great as an effortless, quick appetizer.

 Spinach and Feta Pinwheels

phyllo dough or puff pastry
1 cup frozen spinach, thawed and water squeezed out
1/2 cup crumbled feta cheese
3-5 tbsp olive oil
1 garlic clove, minced

Preheat oven to 395 F (200 C). Cover a baking sheet with parchment paper.

Mix cheese, olive oil, and garlic in a bowl until it is well blended and bit creamy. Roll the phyllo dough out. Then spread the spinach thinly across, followed by the cheese mixture. Then carefully roll the dough up. Then cut the roll into slices 1-2 cm thick. Lay them on the prepared baking sheet. Bake for about 10 minutes or until golden brown in color.
